Sesame Chicken Stir Fry

Sesame Chicken Stir Fry
Another delicious, healthy stir fry!

Chop up the onion, mince the garlic cloves, and put in large skillet.




Trim your chicken breasts: cut off all of the fat, and cube into 1" cubes.  Add the skillet.





Add sesame oil and simmer on high heat and cover until chicken looks white and well done.  Stir frequently.


Toast sesame seeds in small skillet.  Using no oil or water or anything, heat the sesame seeds, being careful not to let them get too hot an spit up.  Toast for about 5 minutes-- the natural oils of the sesame seeds will emerge and they will look noticeably different.

When the chicken is cooked, add the peas and the broccoli and stir frequently to cook evenly.



Once almost done cooking (about 7 minutes later), add the toasted sesame seeds and stir.
Add a dash of lemon juice, and it's prefect!

Ingredients:
1 yellow onion
2 cloves of garlic
8 boneless skinless chicken breasts, thawed if frozen
1 tablespoon sesame oil
1 tablespoon sesame seeds
1 cup frozen peas
4 cups broccoli, thawed if frozen
dash of lemon juice, if desired

Directions:
1.  Chop up the onion and mince the garlic.  Add to a large skillet.
2.  Trim and cut the chicken into 1" cubes.  Add to skillet, along with sesame oil.  Heat on high heat and cover, until the chicken is well done, and white.
3.  While the chicken cooks, toast the sesame seeds in a clean, small skillet.  With no oil or water, heat the sesame seeds on medium-high heat, stirring continuously, until the seeds release their natural oils, about 5 minutes.
4.  Once chicken is cooked, add the peas and broccoli to the stir fry, stirring frequently to cook evenly, and letting the water boil out of the skillet.
5.  Once all veggies are done to desired amount, add the toasted sesame seeds, stir, and let the stir fry completely cook.  Add a dash of lemon juice (fresh or bottled-- I use bottled), and you've got a great, healthy meal!
