Roasted Cheesy Green Bell Peppers

Roasted Cheesy Green Bell Peppers
Delicious and cheesy peppers! :)

Preheat oven to 450 degrees.  Wash, core and slice a large green bell pepper.



Chop the slices in half.


Spread onto pan sprayed with non-stick spray.

Drizzle and mix with the olive oil.

Mince the garlic, then spread over the slices, also.





Bake for about 30 minutes.

Finely grate the cheese, mix with the grated Parmesan cheese.



Once peppers are done, immediately sprinkle the slices with the cheese and mix together.  Done! :)

Ingredients:
1 large green bell pepper
1 tablespoon olive oil
2 garlic cloves, minced
1 oz extra sharp cheddar cheese, finely grated
1/2 teaspoon grated Parmesan cheese

Directions:
1.  Preheat oven to 450 degrees.  Wash and slice the green bell pepper, then cut the slices in half.
2.  Coat the slices with the olive oil, then drizzle the slices with the garlic.  Bake for 30 minutes, turning them half-way through baking.
3.  While baking, combine the cheddar and the Parmesan cheeses in a small bowl.  Once done, immediately coat with cheese.

Huge Chocolate-Chocolate Cookies

Huge Chocolate-Chocolate Cookies
Super addictive chocolate cookies!! :)
Melt chocolate chips in a double-broiler.


Set aside (at room temperature, or in the refrigerator for a short time) to cool down.

Combine the flour, cocoa powder, and salt in a large bowl.  Whisk.





Combine the eggs, vanilla extract, and instant coffee in a second bowl and whisk.




Cream the butter in the mixer on medium speed for about 1 minute.

Add the sugars and whip together until fluffy, 3-6 minutes.


Beat in the egg mixture on low speed until fluffy.


Beat in the chocolate mixture on low speed.


On low speed, beat in the flour mixture.



Fold in the chocolate chips.



Cover with plastic wrap and let sit at room temperature for about 30 minutes, until fudge-like and scoop-able.  Preheat oven to 350 degrees.

Scoop by 2-tablespoonfuls onto pans lined with parchment paper and bake for about 12 minutes, until the tops are not shiny.

Done!! Sooo good! :)

16 oz semi-sweet chocolate chips
2 cups all-purpose flour
1/2 cup cocoa powder
2 teaspoons baking powder
3/4 teaspoons salt
4 large eggs
2 teaspoons vanilla extract
2 teaspoons instant coffee
10 (1 1/4 sticks) butter, softened
1 1/2 cups light brown sugar
1/2 cup sugar
12 oz (2 cups) semi-sweet chocolate chips

Directions:
1.  Melt the 16 oz chocolate chips in a double broiler.  Cool at room temperature.
2.  Whisk together the flour, cocoa powder, baking powder, and salt in a bowl and set aside.
3.  Whisk together the eggs, vanilla extract, and instant coffee in a bowl and set aside.
4.  Whip the butter in a mixer on medium for 1 minute.  Then, add both sugars and whip on medium for 3-6 minutes, until fluffy.

6.  On low speed, add the flour mixture.  Then, fold in the chocolate chips.

Homemade Chicken Fingers

Delicious chicken fingers! :)
Preheat oven to 400 degrees.  Line two pans with aluminum foil and spray with non-stick spray.

Combine the seasonings in a plastic bag and shake to mix.









Trim and cut your chicken into strips.


Shake in seasonings and place on pans, spread apart.

Bake for about 25 minutes, until golden brown.


Beautiful!  Fun!  Done! :)

6 boneless, skinless chicken breasts, thawed if frozen, trimmed, and cut into 3" strips
1/2 cup bread crumbs

1 teaspoon parsley flakes
1/2 teaspoon oregano
1/2 teaspoon garlic
1/4 teaspoon dried basil
1/8 teaspoon salt
1/8 teaspoon ground pepper

Directions:
1.  Preheat oven to 400 degrees.  Line two pans with aluminum foil, and spray with non-stick spray.
2.  Place all seasonings in a plastic bag and shake to mix.
3.  Add the chicken strips to the seasoning, about 10 at a time, shaking to coat.
4.  Place the strips on the pans, leaving space between each finger.  Bake for about 25 minutes, until golden brown.  Done! :)
