Healthy Peanut Butter Cookies

Healthy Peanut Butter Cookies
Preheat oven to 350 degrees.  Add baking soda to mixer along with flour, sugar, brown sugar, and salt.




Mix and then add the applesauce.  Mix again.
Add the vanilla extract and mix well.
Lastly, add the peanut butter.  Make this easier by putting a piece of plastic wrap in the measuring cup and then wiping the peanut butter off of the plastic wrap.
Mix well.
Done!  Now, scoop by a small cookie scoop onto pans lined with parchment paper.  Bake for about 10 minutes, until the cookies are brown on top.

Ingredients:
3/4 teaspoon baking soda
3 tablespoons all-purpose flour
1/4 cup sugar
2 tablespoons brown sugar
1/8 teaspoon salt
2 tablespoons unsweetened applesauce
1/2 teaspoon vanilla extract
1/2 cup peanut butter (don't use natural, because the oil reacts adversely with the recipe-- I used disgusting (to me) hydrogenated Skippy Smooth Peanut Butter :P

Directions:
1.  Preheat oven to 350 degrees.  Place baking soda, flour, sugar, brown sugar, and salt in mixer and mix well.
2.  Add the applesauce, mix, then add the vanilla extract and mix.  Lastly, add the peanut butter (use plastic wrap on the measuring cup to help with measuring, or weigh it), and mix well.
3.  Scoop by small ice cream scoop onto pans lined with parchment paper and bake for about 10 minutes, or until the tops are brown, on middle racks of oven.  Done!
