Double Chocolate Cookies

Double Chocolate Cookies
Delicious and indulgent! :)
Preheat oven to 350 degrees.  Chop up the chocolate and microwave in a glass container with the butter, stirring after 20 second increments, stopping when all chocolate is smooth.





In mixer, add the eggs, brown sugar, and vanilla extract and whip until it is light and fluffy.





Add the chocolate to the mixer and mix well.

Add the baking powder, mix, then add the salt.

Add the 2/3 cup flour and mix well.

Fold in the chocolate chips and drop by an ice cream scoop onto pans lined with parchment paper.


Bake for about 10 minutes, and they're done! :)

Ingredients:
8 ounces semi-sweet baking bar (I used Ghiradelli)
4 tablespoon butter
2 large eggs
3/4 cup light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup all-purpose flour
2 1/2 cups semi-sweet chocolate chips

Directions:
1.  Preheat oven to 350 degrees.  Melt the chocolate and butter in a glass bowl in microwave in 20 second increments, stirring in between, until the chocolate is smooth.
2.  Whip the eggs, brown sugar, vanilla extract in mixer until light and fluffy.  Add the melted chocolate, and mix well.
3.  Add the baking powder and salt and mix well, then add the flour.
4.  Fold in the chocolate chips.  Drop by an ice cream scoop onto pans lined with parchment paper, and bake for about 10 minutes.   Done!
