Garlic Knots

Garlic Knots
Irresistible garlic knots! :)
First, heat up the water to between 105-120 degrees.
Add the yeast and let sit for about 5 minutes, stir, then let sit again for about 5 minutes.
Add the bread flour, salt, and sugar to the mixer.


Create a hole in the middle of the mixture, and pour the olive oil into it.

Check on your yeast mixture and stir.  Let sit for another 5 minutes.



Add yeast mixture to mixer and mix until a dough is made.


Put dough on floured surface (bread flour), and knead for 5 minutes, adding flour as needed.

Form the dough into a ball and place in a greased bowl.  Spread olive oil onto the ball, cover with plastic wrap, and let rise until doubled, about 1 1/2 hours.




Once ready, line two pans with parchment paper.

Split the dough into four parts (I used a scale to do this).



With each piece of the dough, stretch it into a 5 inch long rectangle, about 3 inches wide.


Cut the dough into three 1 inch strips, 5 inches long.


Cut these strips in half to make 2.5" by 1" strips.

Stretch each out and form into a knot.  Place on pan.




Once done, brush each with olive oil, cover loosely with plastic wrap, and let rise again for about 1 1/2 hours, until doubled.



Mince the garlic cloves.


Once ready, preheat the oven to 400 degrees and melt the butter on medium-low heat in a small saucepan.

Once preheated, let the knots bake for about 15 minutes.

Once the butter is melted, add the minced garlic and saute for about 2-3 minutes.


Add the parsley flasks and the salt to the saucepan.



Saute a bit, then wait for the knots.


Brush knots with the garlic mixture.

Ingredients:

Dough:
3/4 cup warm water (between 105 to 120 degrees)
1 package (2 1/4 teaspoons) dry active yeast
1 3/4 cup bread flour
1 teaspoon salt
1 teaspoon sugar
 1 tablespoon olive oil

Coating:
 5 tablespoons butter
4 cloves of garlic, minced
4 teaspoons dried parsley flakes (or 1/4 cup fresh parsley, minced)
1/2 teaspoon salt

Directions:
1.  Let the yeast sit in the water for 5 minutes, then stir and let it sit again for about 5 to 10 minutes
2.  Add the bread flour, salt, and sugar in the mixer and stir together.  Put a hole in the center of the mix and pour in the olive oil and the yeast mixture.  Mix until a sticky dough forms.
3.  Place dough on floured counter (bread flour) and knead for at least 5 minutes, adding more flour as needed.
4.  Place dough in greased bowl and spread with olive oil.  Cover with plastic wrap and let rise until doubled (at least 1 1/2 hours).
5.  Once doubled, split dough into four parts.  Press each part into a 5" by 3" rectangle and cut into 1" by 5" wide strips.  Pull on each and form into a knot form.  Place on pans lined with parchment paper.
6.  Once done forming knots, brush each with a bit more olive oil and let rise for another 1 1/2 hours, or until doubled.
7.  When the bread is almost done, preheat the oven to 400 degrees.  Melt the butter in a small sauce pan and then add the garlic and saute for 2 to 3 minutes.  Then, add the parsley and the salt, mix well, and take off the heat.
8.  Bake the knots for about 15 minutes, until the tops are golden brown.
9.  "Brush" on the garlic-butter mixture and you're done! :)
