Frosted Fluffy Sugar Cookies

Frosted Fluffy Sugar Cookies
Preheat the oven to 375 degrees.  Cream the butter in the mixer, then add the sugar and powdered sugar and cream.





Add the vanilla extract and the beaten egg and mix well.


Add the baking soda, baking powder, and salt and mix well.
 

Add one cup of cake flour at a time, until you have added 4 1/3 cups.





Place by droplets onto cookie sheets bake for about 10 minutes on the middle racks of the oven.



Let cool completely, then frost (I used left over icing from my Chocolate-Chocolate Cake)

Dip each in a plateful of sprinkles, wiping them with water if the icing is dry to adhere the sprinkles.

Ingredients:
2 cups (4 sticks) butter, softened
1 cup sugar
1 cup powdered sugar
3/4 teaspoon vanilla extract
1 large egg, beaten
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
4 1/2 cups cake flour

Directions:
1.  Preheat the oven to 375 degrees.  Cream the butter, then add both of the sugars and cream.
2.  Add the vanilla extract and the beaten egg and mix well.
3.  Add the baking soda, baking powder, and salt and mix well.  Then, add one cup of cake flour at a time, until you add 4 1/3 cups.
4.  Drop by a medium ice cream scoop onto pans lined with parchment paper and bake for about 10 minutes on the middle racks of the oven.  Let cool completely, then spread the icing onto them, and dip them into the sprinkles (spread out onto a plate).  If the icing dries on the cookie, just brush it with some water, then dip it into the sprinkles.

I've made them with all kinds of icing colors and sprinkles, and they still taste and look great!
