Apple-Walnut Summer Salad with Croutons

A lovely, bright, and fresh salad for lunch. :)

Chop up the apple into bite-sized pieces and but in your large bowl.


Add your chopped walnuts (or any other nut) to the bowl.  If you can't find the nut you want already pre-chopped, just chop it with your knife on your cutting board.  I also recommend peanuts; they taste great in this salad.
Slice your romaine into skinny 1/4" slices and add to the bowl.

Mix up the salad a bit.
Add the lemon juice (bottled or fresh--I used bottled) and mix up.
If you made croutons, feel free to add them (recipe already posted :)  )
Stir in the croutons and you've got a delicious lunch! :)

Ingredients:
One apple of your choice (I used red delicious)
3 tablespoons chopped nut of your choice (I used chopped walnuts, peanuts also taste great)
2 full leaves of lettuce (I used romaine hearts)
3 tablespoons lemon juice (bottled or fresh--I used bottled)
1 recipe homemade croutons (recipe already posted)

Directions:
1.  Cut up apple into bite-sized pieces and add to bowl.
2.  Add the chopped nuts to the bowl (chop on your own or pre-chopped from the store).
3.  Cut up the romaine lettuce into skinny (1/4") strips, and add to the bowl.
4.  Mix up everything in the bowl and then add the lemon juice and mix.
5.  Add the croutons and mix together...  Done!
