Healthy Mini Chocolate Chip Cookies

Healthy Mini Chocolate Chip Cookies
Noticeably different from the traditional chocolate chip cookies, but a perfectly acceptable switch!  Taste fantastic!
Preheat oven to 375 degrees.  Add sugar, brown sugar, apple sauce, vanilla extract, and egg white to mixer and mix together.





Then, add the baking soda, salt, and flour, mixing after each addition.


Stir in the mini chocolate chips gently.

Scoop mix onto pan with a small ice cream scoop lined with parchment paper.  It will be soupy, but don't worry...
They turn out normally! -- Bake for about 7 minutes on the middle racks of oven.
In fact, we ate half of the right away! ;)

Ingredients:
1/4 cup sugar
2 tablespoons (1/8 cup) brown sugar
2 tablespoons (1/8 cup) unsweetened applesauce
1/2 teaspoon vanilla extract
1 large egg white
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup all-purpose flour
1/4 cup mini semisweet chocolate chips

Directions:
1.  Preheat oven to 375 degrees.  Combine sugar, brown sugar, applesauce, vanilla extract, and the egg white in mixing bowl and mix.
2.  Add the baking soda, salt, and flour and mix well.
3.  Drop by small ice cream scoop onto pans lined with parchment paper.  Mix will be soupy, but don't worry, they turn out well.  Bake for about 7 minutes on middle racks of oven.  Done! :)
