National Bake Cookies Day

Hi everyone!  No recipe tonight, but I want to do something cookie-related because it is National Bake Cookies Day.
Some tricks for making cookies/cookie recipes:
1.  If you want to make a drop cookie (think: chocolate chip), do not use as much flour as you would for a stiff-cookie recipe (think: cut-out cookies).
2.  Baking soda is for cookies that have an acid component (think: cream of tarter, or lemon juice) already added, and is about 4 times as strong as baking powder.  Bake these cookies quickly because the gas the soda contains starts to be released right away.  Baking powder is weaker than baking soda.  It contains baking soda, an acidic component (cream of tarter and sodium aluminum sulfate), and some cornstarch.  Double-acting baking powder has two gas releases: when it is added to the dough and also in the oven, unlike baking soda.  Also, the baking powder can be delayed in baking.
3.  Experiment with different piece components:   fruit, chocolate, candies-- soon to come are cookies with cinnamon chips, peanut butter chips, apples, and butterscotch chips.  (Chocolate chip cookies come out fantastically with 1 cup regular semi-sweet chocolate chips and 1 cup mini semi-sweet chocolate chips).
4.  Think of different foods or combinations that you remember or come across.  For example, soon to come are lemon-apple sugar cookies because I loved those flavors together when I made my apple pie).
5. Check, then double-check the oven.  The one mistake you can avoid is burning your cookies!  Just check them frequently!  If you keep them on the cookie sheets after you take them out of the oven, remember that they will still bake a small amount because of how hot the pan and the cookie sheets are.
6.  If the cookies do not turn out the way you want, try, try again-- the first time I make chocolate chip cookies, I added too much flour because I lost count of how many cups I put in, the next time, I fixed that issue, then the last time, I ended up improving them by putting in mini chocolate chips as well as regular semi-sweet chocolate chips.
7.  Salt is a must.  It accentuates the sweetness in the cookie.
