Almond "Log" Cookies

Almond "Log" Cookies
My family's favorite Christmas cookie!  Enjoy!
Whip butter in mixer, then add sugar.

Add the egg whites, then the almond extract and mix.

Add the 1/4 teaspoon salt, then one cup of flour.

Keep adding little amounts of flour until you get to 2 1/2 cups.

Flatten into a disk and refrigerate for at least 1 hour.
Once, ready, preheat oven to 350 degrees, then roll the dough (little bits at a time) into a skinny log shape.  Cut 2 inch pieces of the rope.
Roll each 2 inch piece in the ground walnuts (or any other type of nut you prefer).  Place on pans covered with parchment paper, or pans lined with aluminum foil, sprayed with non-stick spray.  Bake for about 8 minutes (mine took about 9 minutes).
Delectable; irresistible!  Enjoy!

Prep time: 1.5 hours
Total time: 1 hour, 42 minutes
Makes about 3.5 dozen cookies (mine: about 46 cookies)

Ingredients:
1 cup butter, softened
3/4 cup sugar
2 egg yolks
1 teaspoon almond extract
1/4 teaspoon salt
2 1/2 cups unbleached all-purpose flour
1/3 cup ground walnuts (or your preferred nut)

Directions:
1. Whip up the butter in mixer until no clumps are seen.
2.  Add the sugar and mix.
3.  Add the egg yolks and the almond extract and mix.
4.  Add the salt and one cup of flour, mix.  Then, keep adding the flour in small amounts, until you have added 2 1/2 cups.
5.  Flatten dough into a disk and refrigerate for at least 1 hour.
6.  Preheat oven to 350 degrees.  Roll small sections of the dough into a long, skinny log and cut it into 2 inch pieces.  Roll and cover with ground nuts.
7.  Bake on pans lined with parchment paper or pans covered with aluminum foil, sprayed with non-stick spray for 8 minutes (mine took about 9 minutes).  Perfect!
