Mini Cinnamon Palmiers

Mini Cinnamon Palmiers

Delicious, butter-y pastries!
Defrost the pastry for 45 minutes.  Add sugar to small bowl.
Add cinnamon with sugar.

Put some flour on a piece of parchment paper.
Place thawed puff pastry on parchment paper (lines vertical) and dust with flour.
Place another piece of parchment paper on the dough and roll out the creases.
Sprinkle the top of the dough with cinnamon sugar and replace the other piece of parchment paper.  Roll the dough to press in the cinnamon sugar mixture.



Flip over the dough (I used pans to help me with this), and take off the top sheet of parchment paper.

Sprinkle this side with the cinnamon sugar also.
Again, roll with parchment paper to press the sugar into the dough.
Make a thin indentation with a dull knife horizontally in the center of the dough.
Roll up the dough to the center.  Freeze until ready.
Repeat with other dough.

Once done with 2nd dough, put it in the freezer, then get out the 1st, then cut into 1 inch pieces.
Put on pan covered with parchment paper, or pan covered with aluminum foil, sprayed with non-stick spray, roll-side up and bake for 14 minutes in a 400 degree oven.

After 14 minutes, turn them over and bake for 5 more minutes.
Delicious!!

Mini Cinnamon Palmiers

Cooking Time:  19 minutes
Prep time: 1 hour 10 minutes
Total time: 1 hour 29 minutes
Makes about 20 pastries (mine: 21 pastries)

Per pastry:
Calories: 114 calories
Fat: 8 g
Sodium: 80 mg
Carbs: 15 g
Fiber: 1 g
Protein: 2 g

Ingredients:
1 package (17.3 oz) of puff frozen pastry sheets (2)
2/3 cup sugar
4 teaspoon sugar
flour for rolling

Directions:
1.  Defrost puff pastries for about 40 minutes (they're defrosted enough when they do not crack when you try to unroll them).
2.  Put sugar and cinnamon in a small bowl.  Preheat oven to 400 degrees.
3.  Put one puff pastry sheet on a piece of parchment paper (creases=vertical) dusted with flour.
4.  Place another piece of parchment paper on top of the dough and roll out the creases.
5.  Take off top piece of parchment paper and dust top of dough with 1/4 of cinnamon mixture.
6.  Replace piece of parchment paper on top of the dough and run over with rolling pin to press in the cinnamon mixture.
7.  Remove parchment paper once more and make a shallow mark with a dull knife horizontally across the center of the dough.
8.  Roll both ends of the dough to the center line.  Cover with parchment paper and freeze until ready.
9.  Repeat steps 1-8 with other piece of puff pastry, if desired.  Once ready, take out the 1st piece of pastry out of the freezer, and cut into 1 inch pastries.  Place roll-side up on pans covered with parchment paper, or pans covered with aluminum foil, sprayed with non-stick spray.
10.  Bake for 14 minutes, then flip the pastries and bake for another 5 minutes.  Perfect!
