Apple Lemon Sugar Cookies

Apple Lemon Sugar Cookies
My first own creation-- absolutely delicious!  Trust me!
Preheat the oven to 350 degrees.  Whip up the butter, then add the sugar.
Add the egg and mix well.
Add the lemon extract and mix well.
Add the baking soda, baking powder, and salt, and mix.
Add one cup of flour, mix, then add remaining 3/4 cup of flour.
Peel, then chop apples into small pieces (even smaller than pictured here).

USE YOUR HANDS to mix in the apple pieces!  The dough is sticky, but this is the only truly gentle way to mix up the dough.
Put drops of cookies on pans lined with parchment paper, or pans covered with aluminum foil, sprayed with non-stick spray.  Bake on middle racks of oven and bake for about 17 minutes (yes, that long-- I apologize!).  Make sure that the middle of the cookies are not underdone!

Total time: 1 hour, 4 minutes
Makes about 2 dozen cookies (mine: about 26 cookies)

Ingredients:
1/2 cup butter, softened
3/4 cup sugar
1 large egg
1/2 teaspoon lemon extract*
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cup unbleached all-purpose flour
3 cups apples (any kind)

*cannot be omitted

Directions:
1. Whip up the butter in mixer until no clumps are seen.
2.  Add the sugar and mix.
3.  Add the egg, then the lemon extract, and mix well.
4.  Add the baking soda, baking powder, and salt and mix well.
5.  Add one cup of flour and combine well.  Then, keep add the remaining 3/4 cup of flour.
6.  Peel, core, then chop the apples into small pieces (less than 1/2" square).
7.  Gently fold in apples to mixture with hands.  Drop balls of the dough onto pans lined with parchment paper, or pans covered in aluminum foil, sprayed with non-stick spray.
8.  Place pans on middle racks of oven and bake for 17 minutes, checking often afterward.  Halfway through cooking time, flip and switch around the pans in the oven.  Make sure that the middles of the cookies are not underdone.

Yummy!  -- Inspired by the taste of diced apple pieces in the lemon juice-and-sugar mixture present in my apple pie recipe!  Incredible taste!
