Breaded Lemon Chicken

Breaded Lemon Chicken
Delicious breaded lemon chicken!

First, preheat the oven to 375 degrees.
Spray a pan covered with aluminum foil with non-stick spray.
Put the 1/2 cup breadcrumbs, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/2 teaspoon pepper in medium-large Ziploc bag.
Put the 2 tablespoons canola oil, and 1/4 cup lemon juice in another bag.

Chicken time!
Trim each breast, cut up the trimmings for your pet :), and cut each breast in half.  Do for all five breasts.


Put each half in the lemon mixture, shake around, then the bread mixture, and shake.


Spread chicken out on pan.
For the dog :).

Bake on middle rack for 25 minutes.

It will be done when the chicken is over 165 degrees (mine took 35 minutes).

Ingredients:
5 boneless skinless chicken breasts thawed, trimmed, and cut in half
1/2 cup breadcrumbs
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon ground pepper
2 tablespoons canola oil
1/4 cup lemon juice

Directions:
1. Preheat oven to 375 degrees.
2. Combine seasoning (breadcrumbs, garlic powder, salt, and pepper) in medium-large Ziploc bag, then combine canola oil and lemon juice in another bag.
3.  Season cut, trimmed chicken breasts by first mixing them with the lemon juice mixture, then shaking them in the bag with the seasonings.
4.  Place seasoned chicken breasts on pan covered with aluminum foil and sprayed with non-stick spray.
5.  Cook chicken pieces for 25 minutes, then check the thickest piece with a meat thermometer.  Make sure the largest piece passes 365 degrees. (mine took 35 minutes to bake)
