Mini Apple Pies

Mini Apple Pies
Super cute apple pies! :)
Dough:  Combine the flour, sugar, and salt in a mixing bowl and mix.





Add the shredded butter and mix.  Add the water and mix until a dough forms.  Shape into a 4-inch disk and cover with plastic wrap.  Chill for at least 1 hour.

Wash, peel, and cut an apple into small pieces.



Add to a bowl along with cinnamon, nutmeg, and vanilla extract.  Mix well.




Preheat oven to 375 degrees.  Roll out dough to 1/4 inch thick.

Wash and set pan.

Cut out bottom pieces.

Cover the pieces with the melted butter.

Place them in molds with butter side down, and stretch them to come over the top ridge of the mold.

Fill all with filling evenly.

Cut out the top pieces, then cover each pie with them, making sure to press down on the edges to seal.

Brush with melted butter.
Place the mold on a pan, then bake for about 14 minutes.  Done! :)

Ingredients:
Dough:
1 1/4 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
7 tablespoons butter, chilled and shredded
1/4 cup cold water

Filling:
1 large apple, peeled and cut into small pieces
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon vanilla extract
2 tablespoons melted butter

Directions:
1.  Combine the flour, sugar, and salt in mixer and mix.  Then, add the shredded butter and mix.  Finally, add the water and mix until a dough forms.  Shape dough into a 4-inch disk and chill for at least 1 hour.
2.  Filling:  Combine the apple, cinnamon, nutmeg, and vanilla extract in a bowl and mix well.
3.  When ready, preheat the oven to 375 degrees.  Roll out the dough to a 1/4" thick and punch out the bottom pieces of dough.  Spread with melted butter and place them butter-side down in the molds.  Stretch the edges to hang over the edge of the mold.
4.  Fill each pie equally with filling.  Punch out the top lattice pieces and crimp them onto the tops of the pies.  Brush each with melted butter.
5.  Place the mold on a baking pan and bake for about 14 minutes, until the edges of the crust are golden brown.  Done! :)
