Chocolate Chocolate Chip Meringue Cookies

Chocolate Chocolate Chip Meringue Cookies
Delicious meringue cookies with a hint of chocolate! :)

Preheat oven to 300 degrees.  Whisk the egg whites and the cream of tarter in a mixer on high speed until soft peaks form.



Slowly add the sugar on high speed until stiff peaks form.

Add the vanilla extract, with mixer off, then mix together.

Add the cocoa powder and mix.


Gently fold in the chocolate chips.

Bake for about 40 minutes, and you're done! :)

Ingredients:
2 large egg whites
1/8 teaspoon cream of tarter
1/2 cup sugar
1/2 teaspoon vanilla extract
1 tablespoon cocoa powder
2/3 cup mini semi-sweet chocolate chips

Directions:
1.  Preheat the oven to 300 degrees.  Whip the egg whites and the cream of tarter together on high speed until soft peaks form.
2.  On high speed, slowly add the sugar, until stiff peaks form.
3.  Stop the mixer, add the vanilla extract, then continue mixing.  Also do this with the cocoa powder.
4.  Stop the mixer and gently fold in the mini chocolate chips.
5.  Drop by 2-tablespoon-fuls (I used a small ice cream scoop) onto 2 pans lined with parchment paper.  Bake for about 40 minutes, until dried out and they have a stiff coating.
