Baked Lemon Chicken Breasts

 Baked Lemon Chicken Breasts
Delicious, Italian-inspired chicken breasts! :)

Preheat the oven to 425 degrees.  Trim your chicken breasts.



Cut chicken in half.


Spray a baking pan covered with foil with non-stick spray.

Pllace chicken breasts on pan, spread apart, then sprinkle with kosher salt and pepper.


Bake for 15 minutes (halfway done).

Combine the olive oil, lemon juice, apple cider vinegar, garlic powder, red pepper flakes, oregano, and parsley in a small bowl and whisk well.








Once chicken is baked, take chicken off of the pan, drain the juice, then replace chicken.





Pour the sauce over the chicken, then bake until chicken is done (160 degrees), about 20 minutes longer.

Done!  Delicious! :)

Ingredients:
5 boneless, skinless chicken breasts, thawed if frozen, trimmed, and cut in half
1/2 teaspoon kosher salt
1/2 teaspoon ground pepper
1/4 cup olive oil
1/4 cup lemon juice (I used bottled)
1 tablespoon apple cider vinegar
2 tablespoons garlic powder
1/4 teaspoon red pepper flakes
1/2 teaspoon dried oregano
2 tablespoons dried parsley flakes

Directions:
1.  Preheat oven to 425 degrees.  Place chicken on pan lined with aluminum foil, sprayed with non-stick spray.  Sprinkle with kosher salt and pepper.  Bake for about 15 minutes (halfway done).
2.  Combine the rest of the ingredients in a small bowl and whisk together.
3.  Once chicken has baked for 15 minutes, take the chicken off of the pan, drain the juice, then replace the chicken.  Pour the sauce over the chicken, then bake the chicken until it's done, about 2-0 more minutes.  Done! :)
