Chocolate Crackle Cookies
Delicious chocolate-filled cookies! :) |
Preheat the oven to 350 degrees. Whip up the butter a bit in the mixer. |
Add the brown sugar and whip together for about 3 minutes. |
Add the eggs and mix well for about 3 more minutes. |
Add the flour, cocoa powder, baking powder, and salt in a bowl and whisk well. |
Once the eggs are whipped well, add the flour mixture in small batches, mixing thoroughly in between each addition. |
Take dough by 2-tablespoon balls (I used a small ice cream scoop), and coat them with the confectionery's sugar. |
Bake for about 13 minutes, until the tops, through the cracks, look like stiff, well-done brownies. |

Ingredients:
1/2 cup (one stick) butter, softened
1 cup light brown sugar
2 large eggs
1 1/4 cup all-purpose flour
3/4 cup cocoa powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/4 cup confectionery's sugar
Directions:
1. Preheat oven to 350 degrees. Cream the butter with the brown sugar for 3 minutes in the mixer, until light and fluffy.
2. Add the eggs and beat again for another 3 minutes, until it looks like the consistency of frosting.
3. Combine the flour, cocoa powder, baking soda, and salt in a bowl and whisk together well.
4. Slowly add the flour mixture to the batter, stopping as soon as incorporated.
5. Drop by 2-tablespoons (I used an ice cream scoop) into the confectionery's sugar to coat. Place 2 inches apart on a baking pan lined with parchment paper, then bake for about 13 minutes, or until the crackles on the tops look like well-done brownies.
