Candy Cane Chocolate Chip Meringue Cookies

Preheat the oven to 225 degrees. Place the egg whites and the cream of tarter in the mixing bowl and whip with the whisk attachment for about 3 minutes on medium speed, until light and fluffy. |
Increase the speed to high, and slowly add the sugar, one tablespoon at a time, until thick, stiff peaks are created. |
Gently fold in the chocolate chips. |
Crush the candy cane in either a pestle and mortar or a Ziploc bag with a rolling pin. |

Ingredients:

1 cup semisweet chocolate chips (I used Nestle's)
1 candy cane, crushed to a powder (I used Willy Wonka's)
Directions:
1. Preheat the oven to 225 degrees. Whip the egg whites in the mixer on medium speed with the whisk attachment for about 3 minutes, until light and fluffy.
2. Increase the speed to high and slowly add the sugar (one tablespoon at a time) to the egg mixture, until stiff peaks are created, about 3 more minutes.
3. Gently fold in the chocolate chips.
4. Drop by 2-tablespoons-fuls onto pans lined with parchment paper, and sprinkle with crushed candy cane.
5. Bake for about 1 hour and 30 minutes, or until the cookies are dried out and have a stiff outer coating.
