Homemade Apple Pie

Homemade Apple Pie
Beautiful apple pie!

Preheat the oven to 375 degrees.  Add the 2 1/2 cups flour, 1/4 cup sugar, 1 teaspoon salt to mixer and mix.
Cut the butter into 1/2 inch pieces.
Add the butter to the mixer.
Stir until mixed into small crumbles--cover the edge of the mixer with a towel if needed.
Add one egg at a time with 1/4 cup cold water, then add and mix.

Mix, mix-- until dough forms, no more.
Split dough in half and press each into a disk, cover with plastic wrap, and refrigerate at least one hour.
Add 2/3 cup sugar and 2 tablespoon lemon juice in a large bowl and mix.
Weigh out 3 lbs of cooking apples (any kind, really).  If no scale, use about 7 medium-large apples.
Peel, and cube the apples and toss in the sugar/lemon juice mixture.
Add 4 tablespoons to a large saucepan or a large pot.
Add the apples and heat on high for about 10 minutes, stirring occasionally, until the apples are soft.  Then, add the 1 tablespoon flour, 1/2 teaspoon cinnamon, and pinches of ground cloves and nutmeg to the mixture, till thick, then turn off the heat and cool completely.
Take the dough out of the fridge and roll out each on a floured surface
Roll out each piece to 12 inches.
Press each into 9-inch pie dishes, sprayed with non-stick spray.
Once the apple mixture is completely cool, add to the pie dish.  Crimp edges with fingers.  Cut up 2 tablespoons of butter and place on top of apples.  Put in fridge for at least 30 minutes.

Roll out the other piece of dough to 12 inches, also.
Place the dough on top of the pie.
Crimp top onto the bottom piece of dough.
Cut slits into the top of the pie (for decoration).
Poke with a fork (for decoration). :)
Whip up the other egg and spread over the pie.

Put the pie on the middle shelf of the oven on a pan.
Bake for 50-60 minutes (if needed, cover the edges with foil if they bake too quickly-- I didn't have to).
Beautiful, yummy, done!

Ingredients:

2 1/2 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
1/2 cup butter (chilled)
1 large eggs

2/3 cup sugar
2 tablespoons lemon juice
3 lbs cooking apples, peeled and cut into bite-sized cubes

4 tablespoons butter
1 tablespoon flour
1/2 teaspoon cinnamon
Pinch of ground cloves
Pinch of nutmeg

2 tablespoons butter

1 large egg


Directions:
1.  Preheat oven to 375 degrees.
2.  Put the 2 1/2 cups flour, 1/4 sugar, and 1 teaspoon salt in mixer and mix.
3.  Add 1/2 cup of butter, cut into 1/2-inch cubes and mix.
4.  Combine one egg with 1/4 cup cold water, add, and mix.
5.  When dough comes together, stop mixing, split dough in half, press each half into a disk, cover in plastic wrap, and refrigerate for 1 hour.
6.  Combine 2/3 sugar and 2 tablespoons of lemon juice to large bowl.
7.  Peel and cube into bite-sized pieces 3 lbs of cooking apples.  Toss with the sugar and lemon juice.
8.  Melt the 2 tablespoons in a large saucepan or large pot and add the apple mixture.  Cook on high heat for about 10 minutes, stirring occasionally, until the apples are soft, yet firm.  Then, add the 1 tablespoon flour, 1/2 teaspoon cinnamon, and the cloves and nutmeg.  Heat until thick, then take away from heat and cool completely.
9.  After 1 hour, roll out once piece of dough on a floured surface into a 12 inch circle.
10.  Place on bottom of 9-inch pie dish, sprayed with non-stick spray.
11.  Add the apple mixture once it's completely cool, cut up 2 tablespoons of butter, place on top of apple mixture in the dish, then refrigerate for 30 minutes.
12.  Roll out the other piece of dough into a 12-inch circle.
13.  Spread and press the brown sugar/cinnamon mixture onto the top of the dough.
14.  Place the piece of dough on top of the apple mixture and crimp edges.  Cut decorative slits and fork-cuts into top of pie.
15.  Whip up the remaining 1 egg and spread over the top of the pie.
16.  Bake for 50-60 minutes, covering the edges with foil if the brown too quickly (I didn't have to).
