Brownie Cut-Out Cookies

Brownie Cut-Out Cookies

Yummy brownie cut-out cookies!
Preheat oven to 350 degrees and add butter to mixer.

Whip up the butter! (If not at room temperature, keep whipping!)
Add the sugar and mix well.
Add one egg at a time, stirring well after each addition.


Add the vanilla extract and stir.

Add the salt, baking powder in the mixture.
Add the cocoa powder (I used Hershey's).

Add one cup of flour, mixing well after each addition, until you add 3 cups.




Roll out dough to 1/4 inch thickness on floured counter top and cut into desired shapes.
Place cut-outs on pan lined with parchment paper or pan covered with aluminum foil, sprayed with non-stick spray.
Put pans on middle shelves of oven.

Bake for 9 minutes (mine took about 13).

Total time: 43 minutes
Makes about 3 1/2 dozen cookies (mine: 42 medium cookies)

Ingredients:
1 cup butter (salted, or unsalted) softened to room temperature*
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup cocoa (I used Hershey's)
3 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Directions:
1. Preheat oven to 350 degrees.
2. Whip up the butter in mixer until no clumps are seen.
3.  Add 1 1/2 cups sugar and mix.
4.  Add the 1 teaspoon vanilla and mix well.
 5.  Add one egg at a time, mixing well after each addition.
6.  Add the 1/2 teaspoon baking powder and 1/2 teaspoon salt to the mixture and mix.
7. Add the 2/3 cup cocoa and mix well.
8.  Add 1 cup of flour and combine well.  Then, keep adding 1 cup of flour, until you get to 3 cups, mixing well after each addition.
9.  Roll out the cookie dough on floured counter top and cut into desired shapes.
10.  Place cut-out cookies on pans lined with parchment paper, or pans covered in aluminum foil, sprayed with non-stick spray.
11.  Place pans on middle racks of oven and bake for 9 minutes, checking often afterward (mine took about 13 minutes to fully bake).

Note:
*Butter does not have to be at room temperature, just keep whipping it until it is smooth, and be cautious about how hard you're working your mixer-- I just broke this one because of working it too hard on frozen butter!
